| This award-winning Southampton bar and restaurant launched its stylish new look in autumn 2007. The launch followed an extensive 3-month refurbishment programme that has transformed the former seafarers’ hotel into the height of boutique accommodation.

This recently redeveloped, Grade II listed hotel is just 500 metres from West Quay shopping centre in Southampton city centre, and walking distance from the port.
The Mercure Southampton Dolphin is one of the oldest buildings in Southampton. It has many original features and hosted Jane Austen''s 18th birthday party.
In 2010 the hotel was completely redeveloped. Its new restaurant, Signature, serves good local cuisine 7 days a week, and there are also menus in the bar and lounge.
